Pollux

The wine « Pollux » comes exclusively from our Gamay vines, and only when full maturity and excellent health of the fruit allow it.

 

  • APPELLATION:
    - Red wines which do not consist of at least 50% Pineau d'Aunis cannot lay claim to the appellation. For this reason Castor is made as a "vin de table".
  • GRAPE VARIETY:
    - 100% "Gamay de Bouze", "Gamay Fréau"x, "Gamay noir à jus blanc" also called "Gamay Beaujolais".
    - 35-year old vines.
  • SOIL (TERROIR):
    - 6 small plots situated in the communes of Lhomme, Chahaignes and Marçon. - Heavy terraced flinty clay, white flint-bearing clay and secondary era clay and sand.
  • VITICULTURE:
    - Ground works: ploughing, earthing-up and hoeing. No weed killers.
    - Maximum yields 20 hl/ha. Manual harvest.
  • VINIFICATION:
    - Fruit left whole without crushing.
    - Pure carbonic maceration for several months.
  • TASTING:
    Three vintages have been produced up tp the present day: 2009, 2011 and 2013 under way
    - 2011: Black fruit with somewhat animal and spicy notes.
  • SERVICE:
    - Goes with: barbecues, snacks, wine-based rabbit or hare casseroles.
    - Drink within 8 to 10 years.
    - Open and serve at 15°C (59°F).
